Easter Blondies

  • 1 cup unsalted butter, melted
  • 1 1/4 cup light brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 cups plain flour
  • 1/2 cup chopped milk chocolate
  • 2 creme eggs
  • 1/2 cup mini eggs


  1. Preheat the oven to 180°C/gas mark 4. Line a 9×13 pan with baking paper.
  2. Combine the melted butter and brown sugar in a mixing bowl.
  3. Add in the eggs and vanilla extract and mix well.
  4. Add in the salt, baking powder, and plain flour. Mix until just combined.
  5. Stir the chopped chocolate.
  6. Pour the batter into the prepared pan and spread out evenly.
  7. Cut the creme eggs in half and place lightly on top of the batter as these will sink when baking. Scatter the mini eggs over the rest of the batter.
  8. Bake at 20-25 minutes or until barely golden brown. 
  9. Remove from the oven and leach to cool completely.
